Question:

"You are using the Sheffield list numbering, and #21/2 is less than #3. How do these 21/2 gouges compare with the Swiss Pfeil #2 range? - which to me seem excellent for finishing."

Answer:

The Sheffield list numbering starts: #1=chisel, #2=skew and #3=the first and flattest gouge.

However, Pfeil start their numbering: #1=chisel, 1S=skew, so #2=the first and flattest gouge.

So Pfeil #2 is equivalent to Sheffield list #3, and both are good tools for finishing. The new Ashley Iles/Chris Pye 21/2 is flatter that either.

Here's a demonstration

On the left: I've stabbed in the same width Pfeil #2 (top) and Iles/Pye 21/2 - they look almost identical, don't they?

However, if you extend the stabbing along the sweep (on the right) you'll see that the Pfeil actually has a smaller radius - it's a slightly deeper tool; not so flat after all.

Does it really matter? Two notes next to each other on the piano seem very similar but of course the difference is crucial. Same here. The flatter gouge will give a finer surface. The only way to prove this to yourself is to try the 21/2's for yourself and see...
